Air Force wins the third annual Defence cooking competition​

Cooking for the Masses wraps up for another successful year

Cooking for the Masses is a collaboration initiative between Broadspectrum's Defence contract and Nestle Professional, aimed at inspiring Chefs to think creatively and beyond their day-to-day cooking on Defence bases. The competition sees Broadspectrum Chefs compete against Australian Defence Force Chefs in a series of cook off rounds at sites around the country, culminating in a grand final event. This year, Compass Group was also invited to attend as a contract partner to Defence.

The 2019 grand final was held at HMAS Kuttabul on the picturesque Sydney harbour, earlier this month, with five teams competing. Our Broadspectrum team was Melissa Webster and Jason Webster from RAAF Edinburgh, along with one Compass team, one Air Force team and two from Navy.

The competitors started their day at 5am with a tour of the Sydney Markets to meet local growers and learn which ingredients they would be using. The teams then had three hours back at HMAS Kuttabul to create an entrée, main and dessert to wow the judges from Broadspectrum, Nestle, Compass and the Executive Chef of the Hyatt Regency Sydney, Sven Ullrich.

Competitors and guests then gathered at the Hyatt Regency for the awards dinner where the Air Force team, LAC Jin Won Seo and LACW Daniele Rathbone from RAAF Amberley, Queensland were crowned the winners. Runners up were the Compass team, Dean Matheson and Jeremy Hyder from RAAF Wagga. Broadspectrum has won the competition for the last two years.

"This competition is one of our highlight events of the year and is an outstanding example of the collaboration that can be achieved between our customers and supply partners," Gavin Campbell, Executive General Manager Defence, Broadspectrum said.

The competition would not have been possible without the hard work of the Broadspectrum Hospitality & Catering team, led by Kent Mincherton, and a number of Broadspectrum's valued supply partners who sponsored the event.
